Brothers David and Dennis Valentino opened Prime Serious Steak in 2013, bringing a classic steakhouse approach into a modern, relaxed setting.
They were already well known in the local dining scene with several successful establishments. Prime, however, is their most focused, food-driven concept yet, designed for guests who appreciate quality, craftsmanship, and a little showmanship.

The Philosophy of Prime Serious Steak
The cuisine at Prime is the result of technique, tradition, and transparency. Perhaps the biggest draw, however, is the Iowa Premium corn-fed beef they serve. All their meat is Certified Black Angus from small, sustainable family farms which raise the cattle and grow the corn they eat. All steaks are aged a minimum of 28 days and then, as a team they decide how long to age individual steaks to dial up the flavor. Bone-in options are also always available.
Another of Prime’s out of the ordinary features is the live butcher room, a decision made during construction. This unique feature allows guests to interact directly with the butcher and order exactly the cut they want, right over the phone. They also pride themselves on signature sauces and soups hand-crafted in house.

Prime Serious Steak offers an elegant dining experience—chef-driven, quality-obsessed, and designed for guests who want a classic steakhouse meal with modern flair. Come for the hand-cut steaks and the popovers and stay for the customer service, but don’t overlook the soups! The lobster bisque is a staple, and the French onion—finished with a popover and Havarti horseradish cheese—has its own fan base.
